  1. Make the marinade by juicing and zesting the lemons into a large bowl.

  2. Mince the shallot and garlic into the bowl.

  3. Add olive oil, dried oregano, salt, paprika and pepper into the bowl. Mix or whisk to combine.

  4. Rinse chicken and pat dry with paper towels. Place chicken in the marinade and use tongs to coat the chicken in the marinade. Cover and place in the fridge for 1 to 2 hours.

  5. When marinating time is finished, heat the grill or skillet on medium-high. Cook the chicken until internal temperature reaches 165 degrees F, flipping over halfway through. Depending on your stove or grill this could take 5 to 10 minutes per side. Monitor with a meat thermometer.

  6. Remove chicken to a platter and garnish with parsley or oregano. Serve and enjoy!
