Healthier Creamed Corn
  1. Melt butter over medium heat in a large skillet then add onions and peppers. Sauté for 3-5 minutes or until veggies are softened.

  2. Add in corn and sauté another 2-3 minutes.

  3. Turn the heat down to low and add cream cheese, half and half, and vegetable broth. Stir until cream cheese is fully melted then stir in cheddar cheese.

  4. Add spinach and continue to stir until spinach is wilted. Season to taste with salt, pepper, and cayenne pepper if desired. Serve immediately.
