In a bowl, mix flour, wheat gluten, yeast, and a pinch of salt.
Slowly add warm water while stirring until a dough forms.
Knead for 5–8 minutes until smooth and elastic.
Cover and let rest for 15 minutes.
Roll out dough on a parchment-lined tray.
Bake at 500°F (260°C) for 3 minutes.
Remove from oven and spread pizza sauce, cheese, and pepperoni on top.
Return to oven and bake for another 5 minutes, until cheese is bubbling.
