Slow cook pork and other crockpot ingredients on High for 4-6 hours until pork shreds with fork easily. Up to 8 hours if cooked on low heat.
For the gravy, mix flour with butter to make a roux.
Add the roux to liquid from crockpot and allow to thicken.
Slowly add broth to sour cream and bring up to temperature. Whisk to avoid clumps and curdling of sour cream.
Serve over egg noodles with optional sides of peas and garlic bread. Enjoy!
