  1. Heat the oil to sear

  2. Sear the beef, adding salt and pepper

  3. Remove beef

  4. Add the diced onion and sauté for 5 minutes

  5. Add the cornflour

    6, Cook for 1 minute

  6. Add some stock and cook for a couple of minutes

  7. Add the red wine

  8. Cook until it’s silky (5 minutes)

  9. Add the beef and sausages

  10. Add the rest of the stock

  11. Cook on low, lid on for 2 hours

  12. Taste as you go for seasoning.
