Mix self rising flour, Greek yogurt, and hot water until all dough comes together into a solid ball
On a well floured surface, cut dough into 16 pieces
Flatten each piece and roll using a quarter-turn rocking motion with rolling pin (forward, back, quarter turn, repeat) until round
Heat a skillet to medium heat
Cook tortilla on one side until it gets bubbly
Flip and cook on other side until it puffs up
Keep warm under a towel
Serve warm
