Add ½ cup of mini marshmallows to a saucepan
Toast the marshmallows on medium-low heat for a couple minutes until they are nice and golden
In a separate bowl, whip 1 cup of heavy whipping cream with 2 tablespoons of sugar and ½ teaspoon of vanilla extract
Add the toasted marshmallows to the whipped cream and stir to combine
Pour the mixture into a jar and freeze for about 5 hours, or until completely frozen
Once frozen, give the jar a nice shake to incorporate the marshmallows
