Dry-Fried Beef Slivers

  1. Cut the beef sirloin into thin slivers and then pound the pieces thin to make them tender

  2. Marinate the beef with soy sauce, rice wine, cornstarch, and a pinch of salt for 30 minutes

  3. Heat oil in a wok or large skillet over high heat until very hot

  4. Add the beef and stir-fry, breaking up any clumps as it cooks

  5. Remove the beef from the wok and set aside

  6. Add more oil if needed and stir-fry the garlic, ginger, and dried chilies until fragrant

  7. Return the beef to the wok and add the scallions and sugar

  8. Toss everything together and continue to stir-fry for 1-2 minutes until the beef is coated with the aromatics

  9. Season with salt and pepper to taste and serve immediately
