Chocolate Mousse
  1. Break chocolate into pieces and melt over double boiler.

  2. Allow to cool at room temperature.

  3. Beat egg whites until stiff then lightly whip cream and sugar.

  4. Very lightly whip egg yolk.

  5. Stir egg yolks and brandy into melted chocolate.

  6. Fold in some egg white then fold the chocolate mix into the egg whites.

  7. Fold in the cream and allow to set.
