Classic Puff Pastry With Custard And Whipped Cream
  1. In a saucepan, bring water, butter, and salt to a boil.

  2. Add flour, stirring until a dough forms. Cool slightly, then beat in eggs one at a time.

  3. Preheat oven to 200°C (392°F).

  4. Pipe or spoon dough onto a baking sheet.

  5. Bake at 200°C for 10 minutes, then reduce to 180°C for 20 minutes, and finally, 160°C for 10 minutes. Cool completely.

  6. Whisk yolks and sugar until pale; add flour.

  7. Heat milk to boiling, then mix into yolk mixture. Return to stove and cook until thickened. Cool.

  8. Whip cream and sugar until stiff peaks form.

  9. Slice pastries in half, fill with custard, and top with whipped cream. Dust with powdered sugar if desired.
