Grated Zucchini Orecchiette
  1. Heat up some oil and sauté the thinly sliced garlic and shallots until tender.

  2. Deglaze with a little white wine and let it cook.

  3. Cook the orecchiette pasta until about two-thirds done.

  4. Grate the zucchini and add it to the pan with the partially cooked pasta.

  5. Let the zucchini cook and the pasta finish cooking, absorbing the zucchini liquid.

  6. Add ricotta cheese and pecorino to bring everything together.

  7. Top with cleaned squash blossoms, black pepper, and olive oil.

  8. Optionally, add some fresh torn basil.
