Tender Lemon Cake
  1. Mix 230g sugar with zest of 2 medium lemons

  2. Add 4 medium eggs and 230g softened salted butter

  3. Fold in 230g self raising sponge flour

  4. Add 150ml full fat coconut milk and 1 tsp vanilla extract

  5. Pour into a 30cm x 20cm tray

  6. Bake at 175°C for about 25 minutes

  7. Let cool slightly

  8. Mix 150g icing sugar

  9. ith juice of 1–2 lemons to make icing

  10. Slice and serve
