Mix 230g sugar with zest of 2 medium lemons
Add 4 medium eggs and 230g softened salted butter
Fold in 230g self raising sponge flour
Add 150ml full fat coconut milk and 1 tsp vanilla extract
Pour into a 30cm x 20cm tray
Bake at 175°C for about 25 minutes
Let cool slightly
Mix 150g icing sugar
ith juice of 1–2 lemons to make icing
Slice and serve
