In a separate bowl, whisk together melted coconut oil or butter, maple syrup or honey, eggs, and vanilla extract until smooth
Pour the wet ingredients into the dry ingredients and stir until just combined
Fold in any optional add-ins like chocolate chips or dried fruit
Scoop dough onto the baking sheet and form into a round disc about 1 inch thick
Use a sharp knife to cut the disc into 6–8 wedges
Gently separate the wedges so they have space to bake evenly
Bake for 18–22 minutes or until golden on top and firm to the touch
Let cool on the baking sheet for 10 minutes before transferring to a wire rack
