Savory Corn Waffles With Tomato-herb Salad
  1. Heat oven to 200°F. Set wire rack over rimmed baking sheet and place in oven.

  2. In large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.

  3. In second bowl, whisk together egg yolks, buttermilk, and melted butter. Stir in corn and jalapeño. Add flour mixture and stir until just incorporated.

  4. In medium bowl, using electric mixer, beat egg whites with pinch of salt to form stiff peaks. Fold into batter.

  5. Heat waffle iron. Once hot, lightly butter. Spoon ½ cup batter per waffle into iron and cook until golden brown, 5 to 6 min. Transfer to oven and keep warm. Repeat with remaining batter.

  6. Serve waffles with salad, drizzled with yogurt dressing.
