Cajun Pasta
  1. Start by rubbing the seasonings onto both sides of your chicken.

  2. Place a pan onto medium heat and add a generous amount of butter. Let this melt.

  3. Add your chicken breasts into the pan. Cook them on both sides until fully cooked, then take them out of the pan and leave aside.

  4. In a separate pot, cook your pasta in some salted boiling water. Once cooked, drain the pasta but make sure to save about ¼ cup / 60ml of the water, we are going to use this later.

  5. In the same pan we cooked the chicken in, add some more butter and then add your onions. Cook these on medium heat until the onions have browned and softened.

  6. Add your chopped peppers, cover and cook for a few minutes until these have softened too.

  7. Now add the chopped tomato paste, chopped garlic and all the seasonings. Mix and cook for about 2 minutes.

  8. Add your double cream, the pasta water we saved and then as much grated parmesan as you want. Give this a mix, then let this sauce simmer for a minute or 2, we just want it to thicken a little.

  9. Add the cooked pasta and give this a mix. Then cut up your cooked chicken breast and add this on top, along with some more grated parmesan.

  10. Lower your heat, cover your pan and leave this for a few minutes. We are just doing this so the chicken can become hot again.

  11. Now the cajun pasta is done, enjoy!
