Preheat oven to 375°F (190°C).
Season chicken breasts with olive oil and spices.
In a greased baking dish, arrange seasoned chicken at the center; surround with zucchini slices and add tomatoes and olives.
Bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). Top with feta during the last few minutes if desired.
Serve hot, garnished with fresh parsley.
