Parmesan Cream
  1. Melt down 2 tablespoons of unsalted butter

  2. Add some onions or shallots followed by a little salt and cook for about 3 minutes

  3. Add your garlic and cook for another 2 minutes

  4. Add your dry white wine and let it reduce by about 80%

  5. Push all that through a sieve, put it back on the heat and add your cream

  6. Once it's nice and hot, take a stick blender and start adding loads of finely grated Parmesan cheese

  7. Salt up some boiling water and drop in your pasta of choice

  8. When your pasta is 90% done, strain it and add it to the Parmesan cream sauce

  9. Cook for a minute just until the sauce starts to thicken
