Melt down 2 tablespoons of unsalted butter
Add some onions or shallots followed by a little salt and cook for about 3 minutes
Add your garlic and cook for another 2 minutes
Add your dry white wine and let it reduce by about 80%
Push all that through a sieve, put it back on the heat and add your cream
Once it's nice and hot, take a stick blender and start adding loads of finely grated Parmesan cheese
Salt up some boiling water and drop in your pasta of choice
When your pasta is 90% done, strain it and add it to the Parmesan cream sauce
Cook for a minute just until the sauce starts to thicken
