Sauerkraut Pancakes
  1. Combine the flour, baking powder, salt, egg and water. Add sourdough starter.

  2. Cover the batter and let it sit in the fridge for 24 hours.

  3. Add sauerkraut, crumbed Pecorino Romano and black pepper to the batter.

  4. Heat clarified butter or ghee in a pan. Pour enough to coat the bottom of the pan.

  5. Cook the pancakes until the edges are slightly brown, then add ricotta and flip the pancake.

  6. Garnish the pancakes with caraway seeds and sea salt.
