Chickpea Soda Bread
  1. Preheat your oven to 200°C and grease a loaf tin with coconut oil.

  2. Mix the plant milk and vinegar/lemon juice in a small bowl and leave to sit for 5 minutes.

  3. Add all rest of ingredients except the seeds to separate large bowl and whisk to break up any clumps.

  4. Then add the milk mix, whisk well until smooth and pour into your tin.

  5. Sprinkle the seeds on top if using.

  6. Bake for 25-30 minutes until well risen, golden and firm when pressed.

  7. Leave to cool for 5 minutes before loosening around the edges and turning out onto a wire rack to cool completely.

  8. Slice and keep in an airtight container to use within 4-5 days, or freeze for up to 3 months.
