Lemon Poppy Seed Cookies
  1. Combine butter, sugar, and lemon zest in a large mixing bowl and beat together until light and fluffy.

  2. Add egg yolks and lemon juice and stir until well-combined.

  3. In a separate mixing bowl, whisk together flour, baking soda, baking powder, salt, and poppy seeds.

  4. Gradually add dry ingredients to wet ingredients and stir until completely combined.

  5. Chill the cookie dough in the refrigerator for at least 30 minutes.

  6. Preheat oven to 350F (175C) and line cookie sheets with parchment paper.

  7. Scoop the chilled dough onto the prepared cookie sheets, bake for 11-12 minutes.

  8. Prepare the lemon glaze by whisking powdered sugar with lemon juice until smooth.

  9. Drizzle the glaze over the cooled cookies and allow it to harden before serving.
