Gather the ingredients.
Grease an 8 x 4" loaf pan with solid shortening or spray it with nonstick baking spray containing flour.
In a large bowl, combine 1 cup all-purpose flour, oats, salt, and yeast and mix well.
In a small saucepan, heat water, honey, and butter until very warm, about 120 F. Add this warm mixture to the flour mixture along with egg and beat for three minutes.
Stir in additional 1 to 1 ½ cups flour to make a stiff batter. Cover the batter and let rise until light, about 25 to 30 minutes.
Stir down the batter and spoon into the prepared pan.
Sprinkle with 2 tablespoons oats and cover the loaf with a clean kitchen towel. Let rise until batter reaches the top of the pan, about 15 to 20 minutes.
Meanwhile, preheat oven to 375 F.
Bake the bread for 35 to 40 minutes until the loaf is golden brown and it sounds hollow when lightly tapped.
Remove the bread from the pan immediately and place on a wire rack to cool.
