Peruvian Ancient Grain Soup
  1. Finely chop onion, celery, carrot and capsicum.

  2. Heat olive oil in a large saucepan at medium heat. Cook vegetables until browned.

  3. Add chilli and tomato paste, stir fry for 1-2 minutes.

  4. Add stock and chopped tomatoes, bring to the boil, then reduce to a simmer.

  5. Add Ancient Grains Soup Mix and continue to simmer for around 35 minutes, or until grains are cooked. Add the spinach 5-10mins before taking soup off the heat.

  6. Take off heat and serve garnished with coriander.
