Preheat oven to 180C
Slice or cube the cheese very thin
Cut pastry into 4 rectangles by cutting down the middle and each side in half
Spread cranberry sauce on pastry and layer the cheese
Roll up carefully and slice down the middle, then roll up each side tucking the end underneath
Place on a baking sheet
Sprinkle with salt and pepper
Brush with egg wash (egg yolk mixed with milk)
Bake for 28-33 minutes until crunchy and flaky, reducing to 170C after 10 minutes if needed
Drizzle with honey immediately after removing from oven
