Sheet Pan Breakfast Burritos
  1. Add diced bell peppers, onion, and potatoes to a sheet pan, season with salt, pepper, and olive oil, and toss

  2. Roast vegetables in the oven until softened

  3. Add lean ground breakfast sausage over the roasted vegetables, season with coarse salt, garlic powder, chili powder, sage, Italian seasoning, and cumin

  4. Bake until sausage is browned and cooked through

  5. Blend together egg whites, eggs, cottage cheese, and corn starch

  6. Pour blended egg mixture over the cooked sausage and vegetables

  7. Top with shredded cheddar cheese

  8. Bake until the middle is firm and edges are crisp

  9. Let sit for 10 minutes before slicing

  10. Slice into 10 equally sized rectangles

  11. Mix Greek yogurt and hot sauce together for cream sauce, season with garlic, salt, and pepper

  12. Assemble burritos by adding each rectangle to a burrito tortilla with sauce and cilantro

  13. Roll burritos tightly
