Prepare the cilantro honey lime chicken by combining 1 tbsp better than bouillon, lime juice, honey, cilantro, minced garlic, soy sauce, chili lime seasoning, onion powder, paprika, salt and pepper
Marinate and cook the thin sliced chicken breast with the cilantro honey lime mixture
Optional: reserve 1 tbsp marinade for brushing on chicken after cooking
Cook 1 ½ cups basmati rice according to package instructions
After rice is cooked, stir in 2 tbsp cilantro and juice of 1 lime, add salt to taste
Prepare the roasted red pepper and corn salad by combining roasted corn, diced cucumber, cherry tomatoes, red onion, roasted red peppers, black beans, and avocado
Dress the salad with rice vinegar, olive oil, Italian seasoning, and everything but the elote seasoning
Assemble bowls with ¾ cup cilantro lime rice, honey cilantro chicken breast, and 1 serving roasted red pepper salad
Garnish with extra cilantro and brush chicken with additional sauce if needed
