Middle Eastern Kofta Kebabs Wraps
  1. In a chopper , chop the onions, red and green bell peppers, green chilies, and garlic. Squeeze out any excess water from the chopped vegetables and discard it.

  2. In a large bowl, combine the vegetable mixture with minced chicken, chili flakes, salt, coriander powder, cumin powder, garam masala, paprika, chili powder, black pepper, tomato paste, coriander and ghee. Mix well and cover then set in the refrigerator for 1 hour or 24hr for best results.

  3. Form the mixture into kebabs or patties using your hands. Grill or pan-fry the kebabs over medium heat for about 5-7 minutes on each side, until cooked through and browned. Enjoy the kebabs hot with pita bread, garlic yogurt sauce, and salad.

  4. In a bowl, combine the diced tomato, cucumber, onion, and chopped coriander. Add salt, black pepper, and olive oil. Toss gently to mix.

  5. Mix all ingredients for the garlic sauce in a bowl. Season with salt, black pepper powder and herbs. Chill for 30 minutes before serving.
