Christmas Biscotti
A festive treat perfect for the holidays, these biscotti feature pistachios, dried cranberries, and a delightful white chocolate dip.

Ingredients:
¾ cup granulated sugar
¼ cup olive oil
2 teaspoons vanilla extract
2 large eggs
1 and ¾ cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 and ½ cup pistachios, shelled
½ cup dried cranberries (optional)
white chocolate for dipping or drizzling
Preheat the oven to 300°F (150°C).
In a mixing bowl, combine the granulated sugar and olive oil until well mixed.
Add in the vanilla extract and eggs, then beat until combined.
In a separate bowl, mix together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until combined.
Fold in the pistachios and dried cranberries by hand.
Divide the dough into two equal portions and shape each into a log.
Place the logs on a baking sheet lined with parchment paper.
Bake in the preheated oven for approximately 35 minutes, or until golden brown.
Allow the logs to cool for about 12 minutes before cutting.
With a serrated knife, cut the logs diagonally into biscotti pieces.
Lower the oven temperature to 275°F (135°C).
Place the biscotti cut side down back on the baking sheets.
Bake for an additional 10 minutes to dry out the cookies.
Once cooled, dip the biscotti in melted white chocolate or drizzle over the top.
