Creamy Paprika Chicken & Potatoes
  1. Preheat your oven to 375°F.

  2. Add the potatoes to a large sheet pan. Drizzle with the olive oil and toss to coat. Season generously with salt, black pepper, and paprika, then spread into an even layer.

  3. Nestle the chicken thighs on top of the potatoes.

  4. In a medium bowl, vigorously whisk together the avocado oil, milk, paprika, turmeric, tomato paste, sea salt, black pepper, and oregano until smooth and fully combined.

  5. Pour the sauce evenly over the chicken, making sure each piece is well coated.

  6. Bake for 45–55 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are fork tender. If you’d like a little extra color, broil for the last 2–3 minutes.

  7. Serve with a simple green salad or your favorite vegetables, and spoon the extra sauce over everything.
