Start by making the ginger honey simple syrup. In a saucepan over medium-high heat, combine the water and fresh ginger. Bring to a boil and then turn the heat to medium-low and let simmer for 5 minutes.
Turn off the heat and let the ginger steep until warm (about 10 minutes).
Strain out the ginger using a fine mesh sieve into a large mixing bowl and mix in the honey until fully combined.
Mix in the lemon juice, filtered water, and active yeast.
Transfer to a large mason jar, seal, and gently shake to combine.
Store the bottle in a warm, dark place for 2-3 days to carbonate.
Once carbonated, refrigerate to stop fermentation.
Open carefully (it will be fizzy) and serve cold over ice or mix into holiday mocktails!
