  1. In a pan, cook the bacon fat or oil until caramelized.

  2. Add the garlic, jalapenos, red onion, and spring onions. Cook until fragrant.

  3. Add the grilled and puréed red pepper and tomatoes, along with the tomato paste. Cook for a few minutes.

  4. Add the chicken stock and the rinsed rice. Bring to a boil.

  5. Stir in the Sriracha and lemon juice. Season with salt to taste.

  6. Transfer the mixture to a rice cooker and cook for 15 minutes. Let it steam for another 15 minutes with the lid on.

  7. Fluff the rice with a fork and mix in the remaining ingredients. Let it sit for 20 minutes before serving.
