Add hot water and whisk for 2 minutes until completely dissolved and clear.
Add apple juice, apple cider vinegar, lemon juice, sweetener, and cinnamon. Whisk well.
Whisk in Greek yogurt until smooth and creamy.
Stir in chia seeds and allow them to begin thickening.
Divide evenly into molds or serving cups.
Refrigerate for 2–3 hours until fully set.
Top with mixed berries and serve chilled.
