Combine flour, baking powder, and baking soda
Add egg, water, oil, sugar, and salt to the dry ingredients
Mix and combine until smooth with a rough surface
Cover and let the dough rest for 30 minutes, then perform a stretch
Repeat the stretch and rest process 3 times total
Cover with lid and let it rest overnight or for 5+ hours
Roll dough into a ½-inch thick rectangle
Cut into strips
Stack two strips together and press a chopstick down the center to seal
Preheat oil to 375°F (190°C)
Gently stretch each piece and fry for 2–3 minutes until golden, turning constantly
Serve warm with soy milk or congee
