  1. Combine flour, baking powder, and baking soda

  2. Add egg, water, oil, sugar, and salt to the dry ingredients

  3. Mix and combine until smooth with a rough surface

  4. Cover and let the dough rest for 30 minutes, then perform a stretch

  5. Repeat the stretch and rest process 3 times total

  6. Cover with lid and let it rest overnight or for 5+ hours

  7. Roll dough into a ½-inch thick rectangle

  8. Cut into strips

  9. Stack two strips together and press a chopstick down the center to seal

  10. Preheat oil to 375°F (190°C)

  11. Gently stretch each piece and fry for 2–3 minutes until golden, turning constantly

  12. Serve warm with soy milk or congee
