Vegan Chocolate Mousse
  1. Break up the chocolate and melt using a double boiler or Bain Marie, or in 30 second bursts in the microwave, and let it cool for a few minutes.

  2. Drain any excess liquid off the silken tofu before adding to a blender along with the rest of the ingredients. Blend until smooth.

  3. Add to little ramekins or dishes and place in the fridge for an hour to set. Enjoy with your choice of toppings.
