In a large bowl, combine the bread flour, warm water, granulated sugar, salt, and instant yeast. Knead the dough until smooth and elastic, about 10 minutes.
Cover the dough and let it rise for 1 hour.
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center and gently stretch the dough to form a bagel shape.
Bring a large pot of water to a boil and add the baking soda. Boil the bagels for 1 minute per side.
Transfer the boiled bagels to a baking sheet lined with parchment paper. Brush the tops with the egg wash.
Bake the bagels at 400°F for 20-25 minutes, until golden brown.
