Lasagna Zucchini Bake
  1. Slice zucchini and place in a colander over a medium bowl. Add salt and mix gently to incorporate.

  2. Cover colander with a dish towel and allow to drain for 20 minutes to remove excess water.

  3. Heat olive oil on medium high heat and add diced onions. Sauté for 2 minutes, then add minced garlic and sauté for 1 minute.

  4. Add ground beef, tomato paste, Italian seasoning, and garlic powder to the pan.

  5. Once meat is browned, add tomato sauce and cook down for about 10 minutes.

  6. Add half of the drained zucchini to the bottom of a casserole dish.

  7. Add half of the meat sauce, followed by half of the cheese mixture.

  8. Repeat the layers with remaining zucchini, meat sauce, and cheese.

  9. Bake in the oven at 400°F for 30 minutes.

  10. Let cool for 10 minutes before garnishing with parsley and serving.
