Dumpling Soup (comfort In 30 Minutes)
  1. In a large pot, sauté the onions in olive oil until translucent over a medium heat. Then add the garlic and ginger and stir together for a few minutes

  2. Add shiitake mushrooms to the pot, once they start to brown, add sesame oil, and a pinch of salt and black pepper. Sauté for a few minutes

  3. Pour in the vegetable broth and 3 cups of water. Add soy sauce and once it starts to boil, reduce the heat to low and simmer with the lid on for 10 minutes

  4. Chop the very bottom off the baby bok choy stalks and separate the leaves from eachother. Add them all to the pot along with enoki mushrooms and dumplings

  5. Simmer until dumplings are cooked as per package instructions (usually 2-3 minutes) and it's ready!Serve your delicious dumpling soup in bowls topped with sliced green onions. You can also add some extra soy sauce, chili oil or sriracha and enjoy :)
