Vegan Gluten-free Deli Slices
  1. Preheat oven to 450 degree Fahrenheit. Pat tofu with a paper towel to remove excess water (or use a tofu press).

  2. Add all ingredients except toppings to a food processor, a blender (or use a hand blender) and blend until smooth.

  3. Line 2 baking sheets with parchment paper and dump the mixture onto the sheets, dividing the mixture evenly between the two baking sheets. Smooth out with a spatula.

  4. Add another sheet of parchment on top of the smoothed out mixture and roll until mixture is evenly thin (approximately ⅛ of an inch. Do not roll too thin or they will crack during baking). Repeat for second sheet. Remove the top sheets of parchment paper.

  5. Sprinkle each flattened mixture with the spice toppings and bake for 15 minutes or until firm and slightly brown on top.

  6. Remove from oven and allow to cool.

  7. Optional: Cut deli meat into desired shapes using a large round cookie cutter, or cut into squares or strips with a knife. Store leftovers in refrigerator.
