Rice Krispie Cookies
  1. Preheat the oven to 350°F/180°C, and line 2 large (half size) baking sheets with parchment paper or silicone/silpat mats.

  2. In a bowl of a stand mixer, or using a large mixing bowl and a hand mixer, cream together the butter and sugar (2-3 minutes).

  3. Add egg and vanilla, and mix again. Use a spatula to scrape the bottom of the bowl.

  4. Add the dry ingredients (combine flour, baking soda and salt and add them in). Mix until just combined. Do not overmix.

  5. Fold in the Rice krispies, coconut, and chocolate chips.

  6. Scoop out cookie dough using a small cookie scoop, onto the prepared baking sheets, leaving 2 inches between them.

  7. Bake cookies for 12 minutes or until the edges are set and the bottoms are lightly browned. Remove the cookies to wire racks to cool completely.
