Chocolate Chip Pumpkin Bread
  1. Preheat oven to 350F

  2. Add 1.5 cups of quick cooking gluten free oats to the blender or food processor

  3. Into a bowl, combine 1 cup / 240ml pumpkin puree, 2 pasture raised eggs, ½ cup maple syrup, ⅓ cup olive oil, 1 tsp grated ginger, 1 tbsp cinnamon, 1 tsp pumpkin pie spice, 1 tsp baking powder, Sea salt, 1.5 cup blended oats, ½ cup dark chocolate chips

  4. Pour into a greased baking tray and top with more dark chocolate chips

  5. Bake at 350F for 35 min
