Protein Chicken Pepperoni Pizza
  1. Preheat oven to 395° and line a baking tray with baking paper

  2. Mix chicken mince, eggs, parmesan, garlic powder, Italian seasoning, salt and pepper until fully combined

  3. Press onto the tray into a thin circle or rectangle

  4. Bake for 25 minutes until golden and firm, then let it rest for 5 minutes

  5. Turn oven up to 450° and add pizza sauce, mozzarella and pepperoni

  6. Bake another 10 minutes until melted and bubbling, then grill for 1 to 2 minutes for extra crispiness

  7. Let it cool slightly and slice into 4 pieces
