In a bowl, mix yeast, sugar, and water. Add flour and mix.
Add salt and olive oil, then coil fold immediately (no waiting). Keep folding until the dough can't fold anymore, then cover and leave in a warm place for 2 hours.
Lightly flour parchment paper. Divide dough into 4 portions and place on parchment.
Drizzle olive oil, gently flatten with your hands, and sprinkle oregano and coarse salt (optional).
Slide into a very hot oven with a preheated tray (preheat at least 30 minutes).
Bake for 8 minutes, then broil for 2 minutes until golden.
