Chicken and Mango Rice Bowl
  1. Preheat oven

  2. Dice chicken and mix with oil and seasoning

  3. Put in oven for 20 minutes at 180C

  4. Fry onion in large saucepan until soft

  5. Stir in rice, lemon zest, coriander, red pepper flakes and add water

  6. Bring to the boil and simmer for 10 minutes. Then steam for another 10 minutes

  7. Combine mango, pepper, tomatoes and spring onions with the juice of 1 lime plus salt pepper and other seasoning

  8. Make bowl of rice, chicken, salad and top with avocado and garnish

seasoning mix was 20 g of onion/garlic/cumin/black pepper/rice flour/bell pepper flakes/salt/herbs and 10g of chilli/cumin/garlic/onion/paprika/salt/cayenne pepper
