Marinate cubed chicken with ½ tbsp butter/oil/ghee, lemon juice, ½ cup Greek yogurt, turmeric, garam masala, cumin, dried coriander, chilli powder, garlic, ginger, salt and pepper
Cook the marinated chicken in a pan until 50-60% cooked, then remove and set aside
In the same pan, heat ½ tbsp butter/oil/ghee and cook sliced red onion with salt and pepper
Add turmeric, garam masala, cumin, dried coriander, and chilli powder to the onion
Add garlic and ginger, using a bit of water to deglaze the pan and prevent burning
Add tinned tomatoes and ½ cup water to the pan
Return the partially cooked chicken to the pan and simmer for 10-15 minutes
Blend the curry until smooth
Stir in 1-2 tbsp Greek yogurt or cream to finish
