In a medium-size bowl, add mayonnaise, mustard, Worcestershire sauce, hot sauce, lemon zest, sea salt, and black pepper. Whisk together until thoroughly combined.
Whisk in the egg, then fold in the crab meat carefully.
Add in panko bread crumbs and mix together.
Form the crab mixture into 8 even patties and place onto a plastic wrap lined rimmed baking sheet.
In a skillet, add oil for frying and place over medium-high heat.
Once the oil is shimmering, add in the crab cakes in batches and fry for 3-4 minutes until crispy golden brown. Flip and shallow fry for an additional 3-4 minutes. Remove and let drain on a plate.
