Cut your pork belly into 1-2in strips (if already not cut)
Add to a large pot full of water with with about 2 tbsp salt. Let that come to a simmer and cook for 5-10 mins over med heat.
Dump the water out and rinse off the meat to get rid of all the nastiness.
Add warm/hot water to the pot along with cloves, peppercorn, bay leaves, orange peel, apple cider vinegar, oregano, and 2 tbsp salt.
Bring to a boil lower the heat to med low and cook for 30 mins until tender.
Remove onto wire rack, and let it sit for 20-30 mins. Pat dry really well before frying.
Melt down your lard in a large pot over med heat.
Once your lard is hot (about 300F) add in your pork belly and fry for 30 mins.
Take them out raise heat to (400F) around medium high. Fry them for 8-10 mins until they are a nice golden brown.
Remove and set on a paper towel lined plate or rack. Sprinkle with some salt.
Serve w beans, salva verde, queso fresco, tortillas, and enjoy babe!
