Mini Hand-held Pumpkin Pies
  1. Preheat the oven to 400°F.

  2. In a blender or food processor, add one cup of cottage cheese and blend until smooth.

  3. Add vanilla extract, cinnamon, pumpkin pie spice, salt, and baking powder, and blend.

  4. Add the blended cottage cheese to a large mixing bowl and whisk in pumpkin puree, flour, and maple syrup.

  5. Place wonton wrappers into a muffin tin before adding the pumpkin pie mixture into each one.

  6. Bake for 15 minutes and allow to cool to room temperature. Just like any other pumpkin pie, it needs to set. Allow them time to set for 2 hours.

  7. Top with whipped cream and pecans as garnish before serving.
