Simmer the base: Add cherries, habaneros, garlic, vinegar, brown sugar, honey, tomato paste, soy sauce, smoked paprika, salt, pepper, and water to a saucepan. Bring to a gentle simmer over medium heat and cook for 12–15 minutes until softened.
Blend until smooth: Transfer carefully to a blender and blend until smooth. For a silky finish, strain through a fine mesh sieve.
Reduce the glaze: Return the blended sauce to the pan and simmer over low heat for 8–12 minutes until thick, glossy, and spoon-coating.
Finish: Stir in butter for extra shine, then cool slightly before using.
