  1. Steam the cauliflower until soft and “noodly.”

  2. In a small saucepan, combine the milk, nutritional yeast, garlic powder, onion powder, Dijon mustard, and salt.

  3. Heat over medium, whisking until warm. If using xanthan gum or glucomannan, sprinkle it in slowly while whisking—it will thicken quickly.

  4. Mix the steamed cauliflower into the sauce. Blend lightly with a fork or immersion blender if you want it smoother.

  5. Top with fresh chives and cracked black pepper.
