Add the warm water, honey, yeast & olive oil to a bowl and whisk together.
Add in the flour & salt and mix until you have a messy dough. It doesn't need to be perfect.
Scrape down the sides of the bowl, cover with a tea towel and leave for 15 minutes.
Wet your hands and do 6 to 8 stretch and folds with the dough.
Cover again and leave for 15 minutes.
Wet your hands and do another 6 to 8 stretch and folds.
Cover with a tea towel & leave to rise for 1 hour 20 minutes.
Heavily oil a baking tray (I use parchment paper underneath) & pour the dough in.
Do 3 gentle stretch and folds, then flip the dough over.
Cover with lightly oiled parchment paper and leave for another 1 hour 20 minutes.
Gently drizzle with more olive oil, add fresh rosemary and dimple the dough with your fingers. You should see lots of lovely air bubbles!
Add your toppings, I love fresh grated garlic pushed into the dimples.
Finish with a sprinkle of coarse sea salt.
Preheat your oven to 220°C.
Bake on the lowest rack for 20 to 24 minutes.
