Easy & Delicious Homemade Focaccia
  1. Add the warm water, honey, yeast & olive oil to a bowl and whisk together.

  2. Add in the flour & salt and mix until you have a messy dough. It doesn't need to be perfect.

  3. Scrape down the sides of the bowl, cover with a tea towel and leave for 15 minutes.

  4. Wet your hands and do 6 to 8 stretch and folds with the dough.

  5. Cover again and leave for 15 minutes.

  6. Wet your hands and do another 6 to 8 stretch and folds.

  7. Cover with a tea towel & leave to rise for 1 hour 20 minutes.

  8. Heavily oil a baking tray (I use parchment paper underneath) & pour the dough in.

  9. Do 3 gentle stretch and folds, then flip the dough over.

  10. Cover with lightly oiled parchment paper and leave for another 1 hour 20 minutes.

  11. Gently drizzle with more olive oil, add fresh rosemary and dimple the dough with your fingers. You should see lots of lovely air bubbles!

  12. Add your toppings, I love fresh grated garlic pushed into the dimples.

  13. Finish with a sprinkle of coarse sea salt.

  14. Preheat your oven to 220°C.

  15. Bake on the lowest rack for 20 to 24 minutes.

  16. Enjoy
