Bake the potatoes: poke with a fork, rub with olive oil, sprinkle with salt and pepper, and bake at 400° for 1 hour.
While the potatoes are baking, cook your bacon and crumble it.
Dice the baked potatoes and transfer to a baking dish (I like leaving some crispy skin on. So good!).
Stir in butter, sour cream, cheese, salt, and pepper.
Cover with foil and bake at 350° for 35 minutes, until bubbly.
Top with bacon and green onion, then serve hot.
